I am often asked about the meals I take on trail with me. Most of the time they are homemade preparations. I have a pescatarian diet and most packaged trail meals don't cater to my diet. Also, I like my food better. I know exactly what is in each meal. I limit preservatives and artificial ingredients. In my experience, whole foods are best for humans. But, be free. Do you. 

Here are a couple recipes that I've modified from others I have found on the interweb. 


COUSCOUS CURRY

Serves 1 

Couscous bag: (quart size freezer bag)

½ cup couscous

1/4 tsp salt

1 ½ tsp curry powder (make your own or use your favorite off-the-shelf)

1 ½ tsp brown sugar

Veggie bag: (simple sandwich bag is fine)

½ tsp garlic powder

3 tsp onion flakes (or 1/2 tsp onion powder)

1 Tbsp dried kale 

1 Tbsp dried mushrooms

2 Tbsp mixed dried vegetables 

Additional items:

1 Tbsp olive oil in a small container

On the trail:

  1. 30 min before dinner add warm water to the veggies bag – just enough to cover the ingredients. If cold/cool water, do this one hour before dinner.
  2. Bring water to a boil (3/4 cup)
  3. Add soaked veggies and oil to couscous bag.
  4. Add boiling water to couscous bag and mix well.
  5. Seal the bag and set in a food koozie for 15-20 minutes. (if you don’t have a food koozie, use a sock, glove, or wrap it in a piece of clothing or sleeping bag – just make sure the bag is closed tightly)

COCONUT MANGO STICKY RICE

Serves 1

In a quart size freezer bag add:

½ cup RightRice or instant rice

1 Tbsp coconut milk powder

2 Tbsp freeze dried mango, powdered (you may need to use a coffee grinder or food processor to powder the mango)

2 Tbsp dried mango, diced

1 Tbsp chia seeds

2 Tbsp coconut flakes

On the trail:

  1. Bring water to a boil
  2. Add water to the bag of ingredients and mix well.
  3. Seal the bag and set in a food koozie for 10-15 minutes. (if you don’t have a food koozie, use a sock, glove, or wrap it in a piece of clothing or sleeping bag – just make sure the bag is closed tightly)
