Coconut Millet with Options

I could eat cereal for breakfast every day. I'm a little freaky like that. But if you’re looking for a gluten free option, try millet. Millet is an old world grain, tough and resilient to drought. Nice to know, but I just want a yummy breakfast.  Here goes:

Ingredients
1/2 cup quick oats
1/4 cup millet instant flakes
2 tablespoons coconut milk powder
1 tbsp shredded coconut

Option 1
2 tablespoon dried berries (pick your favorite)
1 tsp Stevia
Option 2
1/4 tsp cinnamon
2 tbsp pecans
1 tbsp brown sugar

At Home
Place all ingredients in a freezer bag.

On the Trail
Bring 1/2 cup water to a (near) boil and pour into the freezer bag.  Mix well by massaging bag with fingers, then place in your insulated pouch for 10 minutes. Eat and enjoy. You could eat this cold too.

Tips
Don't eat a ton of millet; it's not great for the ol' thyroid.
